A quick and easy healthy breakfast parfait featuring creamy Greek yogurt, crunchy honey granola, and fresh berries, perfect for a wholesome start to your day.

  • 2 cups (475 ml) plain Greek yogurt, full-fat or 2%, small-curd preferred
  • 1 to 1 ½ cups (100150 g) honey granola, preferably with crunchy clusters
  • 1 cup (150 g) fresh berries such as blueberries, sliced strawberries, or raspberries
  • 2 tablespoons (30 ml) honey, for drizzling
  • 1 teaspoon vanilla extract (optional)
  • 1 tablespoon chia seeds (optional)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. In a mixing bowl, combine 2 cups (475 ml) of plain Greek yogurt with 1 teaspoon of vanilla extract if desired. Stir gently until smooth and fragrant.
  2. Wash 1 cup (150 g) of fresh berries such as blueberries or sliced strawberries. Drain well on paper towels to avoid watery parfaits.
  3. Start by spooning about ¼ cup (60 ml) of the yogurt mixture into the bottom of each serving glass or jar. Add a layer of honey granola—around 2 tablespoons (20 g). Follow with a layer of fresh berries, about 2 tablespoons (25 g). Repeat layers once more or until the glass is full, ending with a sprinkle of granola on top.
  4. Drizzle about 1 teaspoon (5 ml) of honey over the top of each parfait.
  5. Add a few fresh mint leaves on top if desired. Serve immediately for best texture or refrigerate covered for up to 12 hours, adding honey and granola just before serving.

Notes

Use small-curd Greek yogurt for best texture. Keep granola separate until serving to maintain crunch. Pat berries dry to avoid soggy parfaits. Vanilla extract is optional but adds subtle sweetness. For dairy-free, substitute coconut or almond yogurt and vegan granola.
