Ingredients

Scale
  • 1 pound (450g) lean ground turkey (93% lean preferred)
  • Romaine or butter lettuce leaves, washed and separated
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 green onions, thinly sliced
  • 1 medium carrot, shredded
  • 1 small red bell pepper, diced
  • 1/4 cup smooth peanut butter (natural preferred)
  • 3 tablespoons soy sauce (low-sodium preferred)
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 12 teaspoons sriracha or chili garlic sauce (adjust to taste)
  • 1 teaspoon sesame oil
  • Crushed peanuts, a small handful for garnish
  • Fresh cilantro, chopped (optional)

Instructions

  1. Wash and gently pat dry the lettuce leaves, keeping them whole and crisp. Shred the carrot finely, dice the red bell pepper, thinly slice the green onions, and chop cilantro if using. Set aside.
  2. In a mixing bowl, combine peanut butter, soy sauce, rice vinegar, honey, sriracha, and sesame oil. Whisk well until smooth and creamy. Add warm water one teaspoon at a time if sauce is too thick to reach a pourable consistency.
  3. Heat a large skillet over medium-high heat and add a small drizzle of oil. Add minced garlic and grated ginger, sauté for about 30 seconds until fragrant without burning.
  4. Add ground turkey, breaking it up with a spatula. Cook for 6-8 minutes until browned and cooked through, stirring occasionally.
  5. Stir in shredded carrot, diced red bell pepper, and half of the sliced green onions. Cook for 2-3 minutes until veggies soften slightly but remain crunchy.
  6. Pour the spicy peanut sauce over the turkey mixture and stir well to coat evenly. Cook together for 1-2 minutes to meld flavors and warm the sauce.
  7. Spoon 2-3 tablespoons of the turkey mixture onto each lettuce leaf. Garnish with crushed peanuts, remaining green onions, and chopped cilantro.
  8. Serve immediately to enjoy fresh and crisp lettuce with vibrant flavors. Offer extra spicy peanut sauce on the side if desired.

Notes

Add sriracha gradually to control heat level. Use freshly grated ginger for best flavor. Avoid overcrowding the pan to ensure turkey browns well. Trim thick stem ends of lettuce leaves if too large or floppy for easier folding. Sauce can be made ahead and stored refrigerated up to one week. Store turkey filling and lettuce separately to maintain freshness.
