Ingredients

Scale
  • 8–10 fresh rosemary sprigs
  • 1 block firm cheese (sharp cheddar or gouda), cut into small triangles or stars
  • Wooden toothpicks or small skewers
  • 8 oz brie or camembert
  • 6 oz aged gouda or manchego
  • 6 oz blue cheese or gorgonzola
  • 4 oz fresh mozzarella pearls
  • 6 oz prosciutto, thinly sliced
  • 6 oz Genoa salami
  • 4 oz soppressata or capicola
  • 1 cup mixed olives (green and kalamata)
  • 1/2 cup dried apricots or figs
  • 1/2 cup roasted red peppers, drained and sliced
  • 1/4 cup honey
  • 1/4 cup whole grain mustard or fig jam
  • 1/2 cup almonds or walnuts, toasted
  • 1 pomegranate, seeds removed
  • 1 cup fresh grapes (red and green)
  • Fresh apple or pear slices, tossed in lemon juice
  • 1 box crackers (water crackers or rosemary crackers)
  • 1 baguette, sliced and lightly toasted
  • Pita chips or crostini

Instructions

  1. Make the Rosemary Christmas Trees: Wash and dry rosemary sprigs. Trim bottoms to 4-5 inches. Cut firm cheese into small triangles or use a star-shaped cookie cutter. Thread one cheese piece onto a toothpick, leaving 1/4 inch exposed. Gently push toothpick into center of rosemary sprig about 1 inch from top. Repeat for all sprigs. Refrigerate until ready to arrange.
  2. Prepare the Meats: For salami roses, overlap 6-8 slices in a line, roll tightly, and fan out edges to form a rose. Secure with toothpick if needed. Fold prosciutto into loose ribbons.
  3. Prep the Fruits and Veggies: Cut pomegranate in half and tap back with a wooden spoon to release seeds. Slice apple or pear and toss with lemon juice. Wash and dry grapes, leaving in small clusters. Drain olives and roasted red peppers, pat dry.
  4. Arrange the Board: Place small bowls of olives, honey, and mustard on board as anchors. Space cheeses around board. Add meat roses and prosciutto ribbons between cheeses. Fill gaps with crackers, bread slices, and pita chips in small groups.
  5. Add Final Touches: Place rosemary Christmas trees strategically around board. Scatter pomegranate seeds, dried apricots, nuts, and grapes. Drizzle honey over brie and sprinkle fresh rosemary leaves over board.

Notes

Bring cheeses to room temperature 30 minutes before serving. Assemble board no more than 2 hours before serving. For vegetarian version, skip meats and double up on cheeses. For dairy-free, use vegan cheeses. Store leftovers separately: wrap cheeses in wax paper then plastic wrap, meats tightly wrapped, crackers in airtight container.
