A quick and easy weeknight dinner featuring crispy, golden-brown chicken breasts coated in a garlic Parmesan crust. Ready in just 15 minutes, this recipe is perfect for busy fall evenings and uses simple pantry ingredients.

Ingredients

Scale
  • 2 large boneless, skinless chicken breasts
  • 4–5 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • ½ cup finely grated Parmesan cheese (plus more for serving)
  • ¼ cup all-purpose flour
  • Salt and black pepper to taste
  • 1 teaspoon dried Italian seasoning
  • 1 tablespoon olive oil
  • ¼ cup chicken broth (optional, for pan sauce)
  • Fresh parsley for garnish (optional)

Instructions

  1. Prep the chicken: Place one chicken breast on a cutting board, cover with plastic wrap, and pound to ½-inch thickness. Repeat with the second breast. Season both sides with salt, pepper, and Italian seasoning.
  2. Set up coating station: In a shallow dish, whisk together flour and grated Parmesan cheese.
  3. Dredge the chicken: Coat each seasoned chicken breast in the flour-Parmesan mixture, pressing gently to adhere. Shake off excess and set aside.
  4. Heat the pan: Place a large skillet over medium-high heat. Add olive oil and butter, swirling to combine. Heat until butter is melted and foaming but not browning.
  5. Sear the chicken: Place coated chicken in the hot skillet without crowding. Cook undisturbed for 3-4 minutes until golden and releases easily. Flip using tongs.
  6. Add garlic: Immediately after flipping, add minced garlic to the pan around the chicken. Cook for 30-60 seconds until fragrant, being careful not to burn.
  7. Finish cooking: Cook for another 2-3 minutes until chicken is golden brown and internal temperature reaches 165°F (74°C).
  8. Make pan sauce (optional): Remove chicken from skillet. Pour chicken broth into hot pan, scraping up browned bits. Simmer for 30 seconds, then pour over chicken.
  9. Rest and serve: Let chicken rest for 2-3 minutes before slicing. Garnish with fresh parsley and extra Parmesan. Serve immediately.

Notes

For best results, grate Parmesan from a block rather than using pre-shredded cheese. Pat chicken dry before seasoning to ensure crispy crust. Don’t crowd the pan—cook in batches if needed. Let chicken rest before slicing to keep it juicy.
