These fall crockpot BBQ pulled pork chops are incredibly tender and flavorful, thanks to a secret ingredient: root beer. Perfect for game day, this set-it-and-forget-it recipe delivers sweet, smoky, and tangy pulled pork that will impress a crowd.

Ingredients

Scale
  • 4–6 bone-in pork chops (about 2–3 pounds total)
  • 1 can (12 ounces) root beer
  • 1 ½ cups BBQ sauce, plus more for serving
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons packed brown sugar
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon liquid smoke (optional)

Instructions

  1. Pat the pork chops dry with paper towels. Trim excess fat, leaving a little for flavor. Mix smoked paprika, garlic powder, onion powder, salt, and pepper in a small bowl. Rub the spice mixture all over both sides of the pork chops.
  2. In a separate bowl or directly in the slow cooker, whisk together root beer, 1 cup BBQ sauce, apple cider vinegar, Worcestershire sauce, brown sugar, and liquid smoke (if using).
  3. Place the seasoned pork chops in the bottom of a 5-6 quart slow cooker in a single layer. Pour the root beer mixture over the top, ensuring each chop is mostly submerged.
  4. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the pork is fall-apart tender.
  5. Carefully remove the pork chops from the slow cooker using tongs. Let rest for a few minutes, then shred with two forks, discarding bones and large pieces of fat.
  6. Pour the remaining cooking liquid through a colander into a saucepan (or skim off fat). Bring to a simmer over medium heat and reduce for 5-10 minutes until slightly thickened. Stir in the remaining ½ cup BBQ sauce. Adjust sweetness or tang to taste.
  7. Return shredded pork to the slow cooker or a large bowl. Pour the thickened sauce over the pork and toss to coat evenly. Let sit for a few minutes to absorb flavors. Serve warm on soft buns with coleslaw and extra BBQ sauce.

Notes

For deeper flavor, sear the pork chops in a hot skillet with oil before adding to the slow cooker. Check tenderness at 5 hours on low if chops are thin. To thicken sauce, simmer longer or mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir in. Leftovers keep in the fridge for up to 4 days or freeze for up to 3 months.
