  • 8 ounces cream cheese, softened
  • 2 cups sharp cheddar cheese, shredded
  • 1/2 cup beer (light lager or pilsner)
  • 1/4 cup sour cream

  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika (optional)
  • Salt and black pepper to taste
  • 12 tablespoons milk (if needed)
  • Soft pretzels, for dipping

Instructions

  1. Cook the bacon: Place the chopped bacon in a cold, large skillet. Turn the heat to medium and cook, stirring occasionally, until the bacon is crispy and the fat has rendered, about 8-10 minutes. Use a slotted spoon to transfer the bacon to a paper towel-lined plate. Leave about 1 tablespoon of bacon fat in the skillet.
  2. Start the cheese base: In a medium saucepan over low heat, add the softened cream cheese. Stir constantly with a wooden spoon until it’s completely smooth and melted, about 2-3 minutes.
  3. Add the beer and sour cream: Slowly pour in the beer while stirring continuously. Then add the sour cream, garlic powder, onion powder, and smoked paprika (if using). Stir until everything is well combined and smooth, about 2 minutes.
  4. Melt the cheddar: Gradually add the shredded sharp cheddar cheese, a handful at a time, stirring constantly. Make sure each addition is fully melted before adding the next. Continue until all the cheddar is incorporated, about 3-4 minutes.
  5. Check the consistency: The dip should be thick but dippable. If it seems too thick, stir in a tablespoon of milk at a time until it reaches your desired consistency. Taste and adjust the seasoning with salt and pepper.
  6. Fold in the bacon: Reserve a small handful of the cooked bacon for garnish. Fold the remaining bacon into the cheese dip until it’s evenly distributed.
  7. Serve immediately: Transfer the dip to a serving bowl or a small slow cooker set to warm. Sprinkle the reserved bacon on top. Arrange the soft pretzels around the bowl and serve right away.

Notes

Shred your own cheese for the smoothest melt. Use a light lager or pilsner beer; avoid dark or bitter beers. The alcohol cooks off, making it kid-friendly. For a non-alcoholic version, use non-alcoholic beer or chicken broth. For a gluten-free option, use gluten-free beer and pretzels. The dip can be made ahead and reheated gently on the stovetop or in a slow cooker.
