A warm, comforting apple crisp with a crunchy oat streusel topping, perfect for fall gatherings. This easy dessert comes together in under an hour with simple pantry ingredients.

Ingredients

Scale
  • 6 medium apples (about 2 pounds or 900g), a mix of Granny Smith and Honeycrisp, peeled, cored, and sliced 1/4-inch thick
  • 1/4 cup (50g) granulated sugar
  • 1 tablespoon (15ml) lemon juice
  • 2 tablespoons (16g) all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup (90g) old-fashioned rolled oats
  • 3/4 cup (95g) all-purpose flour
  • 1/2 cup (100g) packed light brown sugar
  • 1/2 cup (113g or 1 stick) unsalted butter, cold and cut into small cubes
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Vanilla ice cream, for serving
  • Optional: caramel sauce or whipped cream

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly butter an 8×8-inch baking dish.
  2. Peel, core, and slice the apples into 1/4-inch thick pieces. Place in a large bowl.
  3. To the apples, add granulated sugar, lemon juice, 2 tablespoons flour, 1 teaspoon cinnamon, and nutmeg. Stir gently until coated. Set aside.
  4. In a separate bowl, combine rolled oats, 3/4 cup flour, brown sugar, 1 teaspoon cinnamon, and salt. Whisk together.
  5. Add cold cubed butter to the dry ingredients. Use a pastry cutter or fingertips to work the butter in until the mixture is crumbly with pea-sized butter lumps.
  6. Pour the apple mixture into the prepared baking dish and spread evenly. Sprinkle the streusel topping evenly over the apples without pressing down.
  7. Place the dish on a baking sheet and bake for 35-40 minutes, until the streusel is golden brown and the apples are bubbling. If browning too quickly, tent with foil for the last 10 minutes.
  8. Let the crisp cool on a wire rack for at least 10 minutes before serving.
  9. Spoon into bowls and top with vanilla ice cream. Serve immediately.

Notes

For a dairy-free version, use cold vegan butter. For gluten-free, use a 1:1 gluten-free baking flour and certified gluten-free oats. Let the crisp rest before serving to allow the filling to set. Toasting the oats first adds a deeper, nuttier flavor.
