  • 1/2 cup sour cream

  • 810 large flour tortillas (burrito-sized, about 10 inches)
  • 1 pound deli turkey breast, thinly sliced
  • 1/2 cup shredded lettuce (optional)

Instructions

  1. Soften the cream cheese: Take cream cheese out of fridge 30-45 minutes before starting. It should be soft enough to press a finger into without resistance. If in a rush, microwave on low power in 10-second bursts.
  2. Make the ranch filling: In a mixing bowl, combine softened cream cheese, ranch seasoning packet, and sour cream. Beat with a hand mixer on medium speed until smooth and fluffy, about 1-2 minutes. Scrape down sides halfway through. Fold in shredded cheddar and chopped green onions by hand until evenly distributed.
  3. Prep your work surface: Lay a large flour tortilla flat on a cutting board. If tortillas are cold from the fridge, let them sit at room temperature for 10 minutes.
  4. Spread the filling: Using an offset spatula or back of a spoon, spread about 2-3 tablespoons of cream cheese mixture evenly across the entire tortilla, leaving a 1/2-inch border around the edges.
  5. Layer the turkey: Lay 2-3 slices of turkey flat over the cream cheese, slightly overlapping for even coverage.
  6. Add lettuce (optional): Sprinkle a thin layer of shredded lettuce over the turkey.
  7. Roll it up tight: Starting at one edge, roll the tortilla tightly but gently, using fingers to keep filling tucked in. Place seam-side down when finished.
  8. Wrap and chill: Wrap each rolled tortilla individually in plastic wrap, twisting ends like a candy wrapper. Refrigerate for at least 1 hour, preferably 2-3 hours or overnight.
  9. Slice and serve: Remove plastic wrap. Using a sharp serrated knife, slice off ragged ends (about 1/2 inch from each end), then slice remaining roll into 1-inch pinwheels using a gentle sawing motion. Arrange on a platter and serve chilled or at room temperature.
