Ingredients

Scale
  • 3 cups cooked turkey, shredded or diced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup frozen mixed vegetables (peas, carrots, corn, green beans)
  • 1/2 cup frozen peas
  • 1/2 cup milk (whole milk preferred)
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 sheet frozen puff pastry (about 9x9 inches)
  • 1 large egg, beaten with 1 tablespoon water
  • Flaky sea salt, for sprinkling (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Place the oven rack in the middle position.
  2. Take the puff pastry out of the freezer and let it sit at room temperature for 10-15 minutes while you prepare the filling.
  3. In a large mixing bowl, combine the shredded turkey, cream of mushroom soup, frozen mixed vegetables, frozen peas, milk, dried thyme, garlic powder, pepper, and salt. Stir until well combined.
  4. Pour the filling into a 10-inch cast iron skillet or oven-safe dish and spread into an even layer.
  5. On a lightly floured surface, gently roll the puff pastry sheet to about 10×10 inches, about 1/8 inch thick.
  6. Place the pastry over the filling, letting the edges hang over the sides. Do not stretch it.
  7. Gently press the edges of the pastry against the rim of the skillet to seal. Use a fork to crimp if desired.
  8. Cut 4-5 small slits in the top of the pastry for steam vents.
  9. Brush the pastry generously with the egg wash. Sprinkle with flaky sea salt if using.
  10. Bake for 25-30 minutes, until the pastry is puffed and deep golden brown and the filling is bubbling. If edges brown too quickly, tent with foil for the last 10 minutes.
  11. Let the pot pie rest for 5-10 minutes before serving.

Notes

For a dairy-free version, use canned coconut milk and a dairy-free cream soup. If using fresh thyme instead of dried, use 1 tablespoon of leaves. Keep puff pastry cold for best flakiness. If filling is too thin, simmer on stovetop to thicken before adding pastry.
