Easy Turkey and Avocado Pinwheels

Quick, tasty, and healthy pinwheels made with turkey, creamy avocado spread, and soft tortillas. Perfect for lunches, snacks, or light appetizers.

  • Flour tortillas (8-inch size)
  • Turkey breast slices, deli-style (6-8 slices)
  • 1 medium ripe avocado, mashed
  • 1 tablespoon fresh lime juice
  • Salt and black pepper to taste
  • A handful of baby spinach or mixed greens (optional)
  • Shredded cheese such as cheddar or mozzarella (optional)
  • 2 tablespoons Greek yogurt or sour cream (optional, for spread)
  • A pinch of garlic powder (optional)
  • Smoked paprika or chili flakes (optional)

Instructions

  1. Prepare the avocado spread: In a mixing bowl, mash the ripe avocado with a fork. Add fresh lime juice, salt, and pepper to taste. If using, mix in Greek yogurt, garlic powder, and smoked paprika. Stir until combined but still slightly chunky.
  2. Lay out the tortillas flat on a clean surface or cutting board.
  3. Spread a generous layer of the avocado mixture evenly over each tortilla, leaving about ½ inch clear around the edges.
  4. Layer 3-4 slices of turkey evenly over the avocado spread. Top with baby spinach or mixed greens and sprinkle shredded cheese if desired.
  5. Starting from one edge, roll the tortilla tightly but gently to keep the filling inside.
  6. Optionally, wrap the rolled tortillas tightly in plastic wrap or parchment paper and refrigerate for at least 10 minutes to firm up.
  7. Using a sharp knife, slice each roll into 1-inch thick pinwheels. Arrange on a serving platter or pack for lunch.

Notes

Use ripe but firm avocado for easy spreading. Warm tortillas slightly to prevent cracking. Chilling the rolled pinwheels before slicing helps keep them neat. Add a splash of water or lime juice if avocado spread is too thick. Substitute whole wheat or gluten-free tortillas as needed. For vegetarian version, swap turkey with roasted vegetables and hummus.
