This incredibly easy slow cooker pulled pork uses just four ingredients and minimal prep for tender, flavorful sandwiches that taste like you spent hours cooking. Perfect for busy weeknights or feeding a crowd.

Ingredients

Scale
  • 3–4 pounds pork shoulder or pork butt
  • 12 ounces root beer (one can, regular not diet)
  • 1 ½ cups barbecue sauce (divided)
  • 6–8 burger buns
  • Coleslaw mix (optional, for topping)
  • Dill pickle slices (optional, for topping)
  • Extra barbecue sauce (optional, for serving)

Instructions

  1. Trim the pork: Place the pork shoulder on a cutting board. Using a sharp knife, trim off any large chunks of excess fat, leaving a thin layer (about ¼ inch).
  2. Add to slow cooker: Place the trimmed pork shoulder into the slow cooker.
  3. Pour in the root beer: Slowly pour the entire can of root beer over the pork.
  4. Add barbecue sauce: Pour ½ cup of barbecue sauce over the pork. Reserve the remaining cup for later.
  5. Cook low and slow: Cover the slow cooker with the lid. Cook on LOW for 8-10 hours or on HIGH for 5-6 hours. The meat is ready when it shreds easily with a fork.
  6. Shred the meat: Carefully remove the pork from the slow cooker and place it on a cutting board. Use two forks to shred the meat into bite-sized pieces. Discard any large pieces of fat that did not render.
  7. Mix with sauce: Return the shredded pork to the slow cooker. Add the remaining 1 cup of barbecue sauce and stir to combine. Let it sit in the warm sauce for 10-15 minutes.
  8. Toast the buns (optional): While the pork rests, split your buns and toast them lightly under the broiler or in a dry skillet for about 2 minutes.
  9. Assemble and serve: Pile the pulled pork generously onto the bottom half of each bun. Top with coleslaw and pickles if desired. Add the top bun and serve immediately with extra barbecue sauce on the side.

Notes

Do not skip the root beer; the carbonation and sugar help tenderize the meat and add flavor. Resist the urge to peek during cooking. Shred the pork while it is still warm for easiest handling. For a gluten-free version, use gluten-free buns and check your barbecue sauce label. For a low-sugar option, use sugar-free barbecue sauce and replace root beer with unsweetened apple cider.
