Buttery, tender Linzer heart cookies with a raspberry jam filling and a dusting of powdered sugar. A happy accident turned into a Valentine’s Day tradition, these cookies are quick, easy, and made with simple ingredients.

Ingredients

Scale
  • 1 cup (226g) unsalted butter, softened to room temperature
  • 2/3 cup (130g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 2 1/4 cups (280g) all-purpose flour, plus more for dusting
  • 1/2 cup (60g) almond flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon (optional)
  • 3 tablespoons raspberry jam (for dough)
  • 1/2 cup (160g) raspberry jam (for filling)
  • 1/4 cup powdered sugar (for dusting)

Instructions

  1. In a stand mixer with paddle attachment, cream softened butter and sugar until light and fluffy, about 3 minutes. Add egg and vanilla extract; beat until combined.
  2. In a separate bowl, whisk together all-purpose flour, almond flour, salt, and cinnamon. Add to wet mixture in two additions, mixing on low until just combined. Add 3 tablespoons raspberry jam and mix on low until mostly incorporated (dough will have pink swirls).
  3. Divide dough into two discs, wrap tightly in plastic wrap, and refrigerate for at least 2 hours or overnight.
  4. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper. Lightly flour work surface and rolling pin. Roll one disc of dough to 1/4-inch thickness. Cut out heart shapes with a large heart cutter. For half the cookies, cut a small heart window in the center using a small heart cutter.
  5. Place cookies 1 inch apart on prepared baking sheets. Bake for 10-12 minutes, until edges are just barely golden. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  6. Once cookies are completely cool, spread about 1/2 teaspoon raspberry jam on each solid cookie (bottoms). Place a window cookie on top and press gently to sandwich.
  7. Just before serving, dust cookies with powdered sugar using a fine-mesh sieve.

Notes

Chill the cut-out cookies for 10 minutes before baking if your kitchen is warm to prevent spreading. Use a thin spatula to move cut cookies. Watch bake time closely; cookies go from perfectly baked to overdone quickly. Let cookies cool completely before assembling to prevent jam from melting. Store assembled cookies in an airtight container at room temperature for up to 5 days. For make-ahead, store baked unassembled cookies for up to a week, then assemble and dust before serving. Freeze baked unassembled cookies for up to 3 months.
