Ingredients

Scale
  • 2 medium apples (Honeycrisp or Granny Smith recommended)
  • 1 tablespoon lemon juice
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt
  • 1 cup apple cider (unfiltered preferred)
  • 2 tablespoons unsalted butter
  • 2 tablespoons brown sugar, packed
  • 1/4 teaspoon vanilla extract
  • Pinch of salt
  • 1/3 cup old-fashioned rolled oats
  • 1/3 cup all-purpose flour
  • 1/3 cup brown sugar, packed
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup cold unsalted butter, cut into small cubes
  • Optional: 2 tablespoons chopped pecans or walnuts

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Make the apple cider caramel: Pour apple cider into a small saucepan and bring to a boil over medium-high heat. Reduce heat to medium and simmer until reduced to about 1/4 cup (8-10 minutes). Remove from heat and whisk in 2 tablespoons butter, 2 tablespoons brown sugar, vanilla, and a pinch of salt until smooth. Set aside.
  3. Prep the apples: Peel, core, and cut apples into 1/2-inch chunks. Toss with lemon juice, granulated sugar, 1/2 teaspoon cinnamon, nutmeg, and a pinch of salt in a medium bowl. Let sit while making topping.
  4. Make the crisp topping: In a small bowl, combine oats, flour, 1/3 cup brown sugar, and 1/2 teaspoon cinnamon. Cut in cold butter cubes using a pastry cutter or two forks until mixture resembles coarse crumbs with pea-sized butter pieces. Stir in nuts if using.
  5. Assemble the crisps: Divide apple mixture evenly between two 8-ounce ramekins. Pour about half the caramel over each (reserve some for drizzling). Sprinkle topping evenly over apples, pressing gently. Place ramekins on a baking sheet.
  6. Bake for 18-22 minutes until topping is golden brown and filling is bubbling. Let cool 5 minutes before serving. Drizzle with reserved caramel and serve with vanilla ice cream or whipped cream if desired.

Notes

Don’t rush the cider reduction; it should be syrupy. Keep butter cold for the topping. Let crisp rest 5 minutes after baking for caramel to thicken. For gluten-free, substitute almond flour. For vegan, use vegan butter and coconut oil.
