Easy Pumpkin Dump Cake with Perfect Butter Pecan Topping

This incredibly easy pumpkin dump cake requires no mixing bowls and no electric mixer. With a buttery, crunchy pecan topping and a soft, spiced pumpkin custard layer, it’s the perfect fall dessert that tastes like you spent hours but comes together in minutes.

  • 1 can (15 oz) pumpkin puree
  • 1 can (12 oz) evaporated milk
  • 3 large eggs
  • 1 cup granulated sugar
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1 box (15.25 oz) yellow cake mix
  • 1 cup chopped pecans
  • 3/4 cup unsalted butter, melted
  • 1/2 teaspoon flaky sea salt (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or nonstick spray.
  2. In a large mixing bowl, whisk together pumpkin puree, evaporated milk, eggs, granulated sugar, pumpkin pie spice, and vanilla extract until smooth and fully combined.
  3. Pour the pumpkin mixture into the greased baking dish and spread evenly to the edges.
  4. Sprinkle the dry yellow cake mix evenly over the entire surface of the pumpkin mixture. Do not stir.
  5. Sprinkle the chopped pecans evenly over the cake mix layer. Gently press them down with your fingers so they stick slightly.
  6. Drizzle the melted butter as evenly as possible over the entire surface using a zigzag motion or spoon.
  7. If using, sprinkle flaky sea salt lightly over the top.
  8. Bake for 45 to 50 minutes, until the top is deep golden brown and the edges are bubbly. The center may still jiggle slightly.
  9. Let the dump cake cool on a wire rack for at least 20 minutes before serving.

Notes

Do not stir the layers. Let the cake rest for at least 20 minutes after baking to allow the pumpkin layer to set. For a different texture, you can use thin slices of cold butter instead of melted butter. Toasting the pecans first deepens their flavor. If the top is browning too fast, tent loosely with foil for the last 10 minutes.
