This easy pecan pie cobbler is a quick and delicious dessert that captures all the rich, buttery, nutty flavor of classic pecan pie without the fuss of rolling dough. It’s perfect for weeknights when you need a comforting treat in under 40 minutes.

Ingredients

Scale
  • 1/2 cup (1 stick or 113g) unsalted butter
  • 1 cup (200g) light brown sugar, packed
  • 1 cup (120g) all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup (180ml) whole milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (170g) pecan halves or pieces
  • 1/4 cup (50g) light brown sugar, packed (for topping)
  • 1/2 teaspoon ground cinnamon (optional)
  • Vanilla ice cream, for serving

Instructions

  1. Preheat your oven to 350°F (175°C). Place the rack in the center position.
  2. Melt the butter: Place the 1/2 cup of unsalted butter in an 8×8 or 9×9 inch baking dish. Put the dish in the oven for about 3-5 minutes, or until the butter is fully melted. Carefully remove the hot dish and set aside.
  3. Mix the dry ingredients: In a medium bowl, whisk together the flour, baking powder, and salt until no lumps remain.
  4. Add the milk and vanilla: Pour in the milk and vanilla extract. Stir with a whisk or fork until just combined. Do not overmix; a few small lumps are fine. The batter will be thick.
  5. Pour the batter over the melted butter: Pour the batter directly over the melted butter in the baking dish. Do not stir. Let it settle.
  6. Make the brown sugar layer: In a small bowl, mix together the 1 cup of packed light brown sugar and 1/4 teaspoon of salt (if not already added). Sprinkle this mixture evenly over the batter. Do not stir.
  7. Add the pecans: Sprinkle the pecan halves evenly over the brown sugar layer. Optionally, roughly chop a few for extra crunch.
  8. Bake: Place the dish in the preheated oven and bake for 35-40 minutes, until golden brown on top and the edges are bubbly. The center should be set but still slightly jiggly.
  9. Cool slightly: Let the cobbler cool on a wire rack for at least 10-15 minutes to allow the sauce to thicken.
  10. Serve: Scoop the warm cobbler into bowls and top with a generous scoop of vanilla ice cream.

Notes

Do not overmix the batter; a few lumps are fine. Use room temperature milk for best results. Let the cobbler rest for 10-15 minutes before serving to allow the sauce to thicken. For extra flavor, toast the pecans at 350°F for 5-7 minutes before adding. Leftovers can be stored in the refrigerator for up to 3 days and reheated in the microwave or oven.
