  • 3 large overripe bananas, mashed
  • 1 ¾ cups (220g) all-purpose flour
  • ½ cup (100g) granulated sugar
  • ¼ cup (50g) light brown sugar, packed
  • ⅓ cup (75g) unsalted butter, melted and slightly cooled
  • 2 large eggs, room temperature
  • ¼ cup (60g) plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup optional mix-ins (chocolate chips, chopped walnuts, or pecans)

Instructions

  1. Preheat your oven to 350°F (175°C). Place your empty Dutch oven inside the oven while it preheats.
  2. In a large mixing bowl, mash the three overripe bananas with a fork or potato masher until mostly smooth with a few small lumps.
  3. Add the melted butter, granulated sugar, brown sugar, eggs, Greek yogurt, and vanilla extract to the mashed bananas. Whisk or stir until well combined and smooth.
  4. In a separate small bowl, whisk together the flour, baking soda, and salt.
  5. Pour the dry ingredients into the wet ingredients. Stir gently with a wooden spoon or spatula until just combined. Do not overmix.
  6. If using mix-ins, gently fold them in now, reserving a handful to sprinkle on top before baking.
  7. Carefully remove the preheated Dutch oven from the oven using oven mitts. Place it on a heat-safe surface. Line the bottom and sides with parchment paper.
  8. Pour the batter into the hot Dutch oven. Smooth the top with a spatula and sprinkle the reserved mix-ins on top.
  9. Cover the Dutch oven with its lid and bake for 30 minutes.
  10. After 30 minutes, carefully remove the lid. Continue baking uncovered for another 20-25 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  11. Turn off the oven and let the bread rest in the pot for 10 minutes. Then, using the parchment paper, lift the loaf out and transfer it to a cooling rack. Let it cool completely before slicing.

Don’t skip preheating the pot; it gives the batter an immediate lift. Use room-temperature ingredients for best texture. Check for doneness early as ovens vary. Let the bread cool completely before slicing to avoid a gummy texture. Using a kitchen scale for flour ensures consistent results.
