  • 1/4 cup (85g) honey
  • 1/3 cup (60g) chocolate chips (semi-sweet or dark)
  • 2 tablespoons (14g) ground flaxseed
  • Pinch of sea salt

Instructions

  1. Combine the dry ingredients: In a medium mixing bowl, add the rolled oats, ground flaxseed, and a pinch of sea salt. Stir together until evenly distributed.
  2. Add the wet ingredients: Spoon the peanut butter and honey into the bowl. Stir everything together with a spatula until the dough comes together. If too dry, add a teaspoon of water or extra honey; if too wet, add a tablespoon more oats.
  3. Fold in the chocolate chips: Once the dough is fully combined, add the chocolate chips and fold gently until evenly distributed.
  4. Roll into balls: Using your hands or a cookie scoop, portion the dough into 12 to 14 balls. Roll each between your palms until smooth. Place on a parchment-lined baking sheet or plate.
