Instructions

  1. Prepare the Oreo bases: Twist 24 Oreo cookies apart, keeping the side with the cream attached to one half. Place the cream-topped halves on a parchment-lined baking sheet, cream side up. Set aside.
  2. Whip the heavy cream: In a medium bowl, pour 1/2 cup of cold heavy cream. Using an electric hand mixer, whip on medium-high speed until stiff peaks form, about 2-3 minutes. Set aside in the refrigerator.
  3. Make the cheesecake filling: In a large bowl, beat 8 ounces of softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 1 minute. Scrape down the sides. Add 1/2 cup powdered sugar and 1 teaspoon vanilla extract. Beat on low until combined, then increase to medium and beat for another 30 seconds until silky.
  4. Fold in the whipped cream: Remove the whipped cream from the fridge. Add about one-third to the cream cheese mixture and gently fold with a rubber spatula using a cutting motion. Add the remaining whipped cream and fold until no white streaks remain. The mixture should be light and airy.
  5. Fill your piping bag: Spoon the cheesecake mixture into a piping bag fitted with a round tip (or a zip-top bag with a corner snipped off). Do not overfill—about halfway is perfect.
  6. Pipe the ghosts: Hold the piping bag vertically over an Oreo base, tip about 1/2 inch above the cookie. Squeeze gently, letting the mixture spread to the edges. Slowly lift the bag upward to create a tall, rounded ghost shape about 1.5 to 2 inches high. Stop squeezing and pull away with a quick upward flick. Repeat for all 24 Oreo bases.
  7. Chill the ghosts: Place the baking sheet in the refrigerator and chill for at least 1 hour (or 30 minutes in the freezer) until firm.
