These Easy Mummy Meatball Skewers are a fun and festive Halloween dinner that comes together in about 30 minutes. With frozen meatballs, biscuit dough, and string cheese, they are a crowd-pleaser that kids and adults will love.

  • 1 (24-ounce) bag frozen fully cooked meatballs
  • 1/2 cup ketchup
  • 2 tablespoons brown sugar, packed
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 (16.3-ounce) can refrigerated biscuit dough
  • 4 sticks string cheese (mozzarella), cut into 1-inch pieces
  • 24 candy eyeballs
  • 1 large egg, beaten
  • 1 tablespoon sesame seeds (optional)
  • Marinara sauce, for dipping

Instructions

  1. Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper.
  2. Make the glaze: In a small bowl, whisk together the ketchup, brown sugar, Worcestershire sauce, garlic powder, and onion powder until smooth. Set aside.
  3. Prepare the meatballs: If frozen meatballs are stuck together, let them sit at room temperature for about 10 minutes to separate. Place them in a medium bowl and pour the glaze over the top. Toss gently until every meatball is well coated.
  4. Thread the meatballs onto skewers: Take a wooden skewer and thread 2 glazed meatballs onto it, leaving a little space between them. Repeat with the remaining meatballs and skewers (about 12 skewers total). Place the skewers on the prepared baking sheet, making sure they are not touching.
  5. Cut the biscuit dough: Open the can of biscuits and separate them (8 biscuits total). Take one biscuit and flatten it slightly with your fingers or a rolling pin. Using a sharp knife or pizza cutter, cut the biscuit into thin strips, about 1/4-inch wide. Repeat with the remaining biscuits.
  6. Wrap the mummies: Take a strip of dough and wrap it around the meatballs on a skewer, starting at the top and working your way down. Leave a small gap at the top of the meatballs for the eyes. Do not wrap too tightly; leave some meatball peeking through.
  7. Add the cheese: Tuck a small piece of string cheese between the dough strips on top of each meatball.
  8. Apply the egg wash: In a small bowl, beat the egg with a tablespoon of water. Using a pastry brush, gently brush the egg wash over the exposed dough strips. Sprinkle a few sesame seeds on top if using.
  9. Bake: Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the dough is golden brown and the meatballs are heated through. The cheese should be melted and bubbly.
  10. Add the eyes and serve: Remove the skewers from the oven and let them cool on the baking sheet for 2-3 minutes. While still warm, gently press two candy eyeballs onto the exposed meatball at the top of each skewer. Serve immediately with warm marinara sauce for dipping.

Notes

Soak wooden skewers in water for 20 minutes before baking to prevent scorching. If candy eyeballs won’t stick, use a tiny dab of ketchup or mustard as edible glue. For make-ahead, assemble skewers (minus egg wash and eyes) up to 24 hours in advance and refrigerate.
