This easy maple roasted butternut squash with goat cheese is a quick and impressive side dish that’s perfect for weeknights or holidays. The caramelized squash, sweet maple glaze, and tangy goat cheese create an irresistible combination that will have everyone asking for the recipe.

Ingredients

Scale
  • 1 medium butternut squash (about 2 pounds), peeled, seeded, and cut into 1-inch cubes
  • 3 tablespoons pure maple syrup
  • 2 tablespoons extra virgin olive oil
  • 4 ounces soft goat cheese (chèvre), crumbled
  • 1 tablespoon fresh thyme leaves, plus sprigs for garnish
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • Pinch red pepper flakes (optional)
  • ¼ cup toasted pecans (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Position the rack in the middle of the oven.
  2. Prepare the squash: Cut off both ends, peel with a vegetable peeler, cut in half where the narrow neck meets the bulbous bottom, scoop out seeds, and cut into 1-inch cubes.
  3. In a large bowl, combine the cubed squash, olive oil, maple syrup, fresh thyme leaves, salt, and pepper. Toss until evenly coated.
  4. Spread the seasoned squash in a single layer on a rimmed baking sheet. Avoid overcrowding; use two sheets if needed.
  5. Roast for 20-25 minutes, flipping the squash pieces after 15 minutes, until golden-brown edges and fork-tender.
  6. Remove from the oven and let cool for about 2 minutes. Sprinkle crumbled goat cheese over the top.
  7. Garnish with fresh thyme sprigs, toasted pecans, and a pinch of red pepper flakes if desired. Serve warm or at room temperature.

Notes

Don’t skip flipping the squash halfway through for even caramelization. If making ahead, roast the squash but add goat cheese just before serving. For best results, let maple syrup come to room temperature before mixing. Toast pecans in a dry pan for 2-3 minutes for extra flavor.
