Quick and easy maple glazed delicata squash rings that are caramelized, tender, and ready in 20 minutes. No peeling required, perfect for busy weeknights.

Ingredients

Scale
  • 1 medium delicata squash (about 1 pound / 450g)
  • 2 tablespoons (30ml) pure maple syrup
  • 1 tablespoon (15ml) extra virgin olive oil
  • ½ teaspoon fine sea salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon ground cinnamon (optional)
  • Pinch of cayenne pepper (optional)
  • 1 tablespoon (15g) toasted pepitas or pecans (optional)
  • Fresh thyme or rosemary sprigs (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  2. Wash the delicata squash thoroughly and pat dry.
  3. Slice off both ends of the squash (about ¼ inch / 6mm from each end) and discard.
  4. Cut the squash crosswise into ½-inch (1.25cm) thick rings. You should get about 10-12 rings.
  5. Use a small spoon or your fingers to scoop out the seeds from each ring.
  6. In a small bowl, whisk together the maple syrup, olive oil, salt, pepper, and any optional spices (cinnamon, cayenne) until well combined.
  7. Arrange the squash rings in a single layer on the prepared baking sheet, ensuring they do not overlap.
  8. Brush or drizzle the glaze over the tops of the rings, then flip and glaze the other side. Make sure every surface is coated.
  9. Roast for 10 minutes. The rings should be starting to brown on the edges and the glaze bubbling.
  10. Flip the rings carefully using tongs or a spatula. Brush or drizzle any remaining glaze from the bowl onto the flipped rings.
  11. Roast for another 5-8 minutes, until the edges are deeply golden and caramelized, and the centers are tender when pierced with a fork.
  12. Remove from the oven and let rest for 2 minutes. Transfer to a serving platter. If using, sprinkle with pepitas or fresh herbs while the glaze is still tacky.

Notes

For extra crispy edges, let the rings roast the full 8 minutes on the second side, but watch for burning. If your oven runs cool, increase temperature to 450°F (230°C) for the last 5 minutes. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Reheat in the oven at 350°F (175°C) for 5-7 minutes or in an air fryer at 350°F (175°C) for 3-4 minutes. Avoid the microwave.
