  • Salt and freshly ground black pepper to taste

  • 1 cup quinoa (about 170g), rinsed well
  • 2 cups low-sodium chicken broth or water
  • 1 medium zucchini, diced
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 2 cups baby spinach or arugula
  • 2 tablespoons extra virgin olive oil (for dressing)
  • 1 tablespoon fresh lemon juice (for dressing)
  • 1 teaspoon honey or maple syrup (for dressing)
  • Salt and pepper to taste (for dressing)
  • Fresh parsley or cilantro, chopped (for garnish)
  • Optional: crumbled feta or toasted pine nuts for topping

Instructions

  1. Marinate the Chicken (10 minutes active plus 20 minutes rest): In a medium bowl, combine olive oil, lemon juice and zest, minced garlic, oregano, salt, pepper, and red pepper flakes if using. Add the chicken breasts and toss to coat thoroughly. Cover and let it sit at room temperature for at least 20 minutes (or up to 2 hours in the fridge).
  2. Cook the Quinoa (15-20 minutes): Rinse quinoa under cold water until water runs clear. Combine quinoa and chicken broth (or water) in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until liquid is absorbed. Remove from heat, fluff with a fork, and set aside.
  3. Prepare the Veggies (15 minutes): Preheat oven to 425°F (220°C). On a baking sheet lined with parchment, spread diced zucchini, red bell pepper, and halved cherry tomatoes. Drizzle with olive oil, salt, and pepper. Roast for 12-15 minutes until tender and slightly caramelized.
  4. Cook the Chicken (20 minutes): Remove chicken from marinade and place on the baking sheet with the veggies for the last 15-20 minutes of roasting. Bake until internal temperature reaches 165°F (74°C) and chicken is golden and juicy. Optionally, pan-sear chicken for 1 minute on each side before baking for a crust.
  5. Prepare the Lemon Dressing (5 minutes): Whisk together olive oil, fresh lemon juice, honey, salt, and pepper in a small bowl.
  6. Assemble the Bowls (5 minutes): Divide cooked quinoa among meal prep containers or bowls. Top with roasted veggies, sliced lemon chicken, and fresh spinach or arugula. Drizzle with lemon dressing and sprinkle with chopped parsley or cilantro. Add optional feta or pine nuts if desired.
  7. Cool & Store: Let bowls cool to room temperature before sealing and refrigerating. Store in airtight containers for up to 4 days.

Notes

Marinate chicken for at least 20 minutes for best flavor; up to 2 hours or overnight in fridge is ideal. Use a meat thermometer to avoid overcooking chicken (165°F internal temperature). Rinse quinoa well to remove bitterness. Roast veggies separately from chicken for best texture. Add fresh greens just before serving to keep crisp. Leftover quinoa can be refreshed with a splash of water and microwaved. For dairy-free, omit feta and add avocado slices.
