These cranberry brie bites are the perfect appetizer that bridges the gap between what adults want to eat and what kids will actually touch. Made with puff pastry, brie, and cranberry sauce, they come together in under 30 minutes and are a crowd-pleaser for any gathering.

Ingredients

Scale
  • 1 package puff pastry sheets, thawed according to package directions
  • 8 ounces brie cheese, rind on, cut into ½-inch cubes
  • ½ cup cranberry sauce (whole berry or jellied)
  • 1 large egg
  • 1 tablespoon fresh rosemary, finely chopped (optional)
  • ½ teaspoon flaky sea salt
  • All-purpose flour for dusting

Instructions

  1. Preheat your oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper.
  2. Thaw the puff pastry according to package directions. Lightly dust your work surface with flour.
  3. Roll out the puff pastry slightly to smooth out the creases, aiming for about a 12×12 inch square.
  4. Cut the pastry into 16 equal squares, each about 3 inches.
  5. Take the brie out of the fridge and cut it into 16 cubes, about ½ inch each. Leave the rind on.
  6. Place a brie cube in the center of each pastry square.
  7. Top each brie cube with about ½ teaspoon of cranberry sauce.
  8. Fold the pastry corners up over the filling to create a little bundle. Pinch the edges together to seal.
  9. Place the assembled bites on the prepared baking sheet, spacing them about 2 inches apart.
  10. In a small bowl, beat the egg with 1 tablespoon of water to make the egg wash. Brush the top of each bite with the egg wash.
  11. Sprinkle the tops with chopped rosemary and flaky sea salt.
  12. Bake for 15-18 minutes, until the pastry is golden brown and puffed.
  13. Let them cool on the baking sheet for 5 minutes before transferring to a cooling rack.

Notes

Let the brie sit at room temperature for 15-20 minutes before cutting for even melting. Don’t overfill the bites—stick to about ½ teaspoon of cranberry sauce per bite. If the pastry tears while folding, patch it with a scrap piece. These are best served warm, right out of the oven. You can assemble them up to 24 hours ahead and keep them in the fridge; add 2-3 extra minutes to the baking time.
