This easy crockpot chicken breast with herb butter is the ultimate weeknight dinner—simple ingredients, minimal prep, and incredibly juicy results. Perfect for busy nights when you need a delicious, crowd-pleasing meal with almost no effort.

Ingredients

Scale
  • 4 tablespoons unsalted butter, softened
  • 3–4 cloves fresh garlic, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon fresh thyme leaves
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper, freshly ground
  • 4 boneless, skinless chicken breasts (about 1.5 to 2 pounds)
  • ½ cup low-sodium chicken broth
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Make the herb butter: In a small bowl, combine softened butter, minced garlic, chopped parsley, thyme, oregano, salt, and pepper. Mash together with a fork until evenly distributed.
  2. Prep the chicken: Pat chicken breasts dry with paper towels. Season both sides lightly with a pinch of salt and pepper.
  3. Spread the herb butter: Using your fingers or the back of a spoon, spread the herb butter mixture all over the chicken breasts, covering both sides.
  4. Layer in the crockpot: Pour chicken broth into the bottom of the crockpot. Place buttered chicken breasts in a single layer in the pot.
  5. Cook low and slow: Cover and cook on LOW for 2-3 hours or on HIGH for 1.5-2 hours. For medium breasts (6-8 oz each), 2.5 hours on low is usually perfect.
  6. Check for doneness: Chicken is done when internal temperature reaches 165°F (74°C) at the thickest part. Do not leave on warm for more than an hour after cooking.
  7. Rest before serving: Remove chicken from crockpot and let rest on a cutting board for 5 minutes before slicing or shredding.
  8. Add finishing touch: If using, squeeze lemon juice over chicken just before serving.

Notes

For best results, use an instant-read thermometer and pull chicken at 160°F (71°C), then let rest—carryover cooking will bring it to 165°F. Do not lift the lid during cooking. Save the cooking juices for a quick pan sauce or to cook rice. Leftovers keep in the fridge for up to 4 days and freeze for up to 3 months.
