  • 2 tablespoons whole grain mustard
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced

  • 1/2 teaspoon paprika
  • 4 boneless, skinless chicken breasts (about 1.5 pounds)
  • 2 medium sweet potatoes, cut into 1-inch cubes (about 3 cups)
  • 2 cups broccoli florets
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 red onion, cut into wedges
  • 2 tablespoons olive oil (for vegetables)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a large sheet pan with aluminum foil or parchment paper.
  2. In a small bowl, whisk together honey, Dijon mustard, whole grain mustard, 3 tablespoons olive oil, minced garlic, salt, pepper, and paprika until smooth.
  3. Pat chicken breasts dry with paper towels. Place on one side of the prepared sheet pan. Pour half of the honey mustard sauce over the chicken, turning to coat evenly. Arrange in a single layer.
  4. In a large bowl, combine sweet potatoes, broccoli, bell pepper, and red onion. Drizzle with 2 tablespoons olive oil and season with salt and pepper. Toss to coat.
  5. Spread vegetables in a single layer on the other side of the sheet pan. Drizzle remaining honey mustard sauce over vegetables and toss gently.
  6. Roast for 20 minutes. Remove from oven, flip chicken pieces, and stir vegetables. Return to oven and roast for another 15-20 minutes, until chicken reaches an internal temperature of 165°F (74°C) and vegetables are tender and caramelized.
  7. Let rest for 5 minutes before serving. Spoon pan juices over chicken and vegetables.

Notes

Line the sheet pan with foil or parchment for easy cleanup. Cut vegetables uniformly for even cooking. Pat chicken dry to promote browning. Don’t overcrowd the pan; use two pans if needed. For extra caramelization, broil for the last 2-3 minutes, watching carefully to prevent burning.
