Ingredients

Scale
  • 4 salmon fillets (about 6 ounces each, skin on or off)
  • 1/3 cup honey
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 4 cloves garlic (minced fresh)
  • 2 tablespoons olive oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger (optional)
  • 3 cups broccoli florets (about one large head)
  • 1 red bell pepper (sliced into strips)
  • 1 tablespoon sesame seeds (for garnish)
  • 2 green onions (sliced, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper or aluminum foil for easy cleanup.
  2. Make the honey garlic glaze: In a small bowl, whisk together 1/3 cup honey, 3 tablespoons soy sauce, 4 minced garlic cloves, 2 tablespoons olive oil, 1 tablespoon rice vinegar, and 1 teaspoon grated ginger (if using). Whisk until well combined.
  3. Prep the vegetables: Wash and cut 3 cups broccoli florets into bite-sized pieces. Slice 1 red bell pepper into thin strips. Spread the vegetables on the prepared sheet pan in a single layer.
  4. Drizzle half the glaze over the vegetables and toss gently to coat. Spread them back into a single layer, leaving space in the center for the salmon.
  5. Pat the salmon fillets dry with paper towels. Arrange them skin-side down in the center of the pan, nestled among the vegetables. Drizzle the remaining glaze over the salmon, using a brush or spoon to spread it evenly.
  6. Roast for 12-15 minutes, until the salmon flakes easily with a fork and the internal temperature reaches 145°F. The vegetables should be tender with lightly browned edges.
  7. Optional: Switch the oven to broil for 1-2 minutes to caramelize the glaze. Watch closely to prevent burning.
  8. Let the pan rest for 2 minutes before serving. Sprinkle with sesame seeds and sliced green onions. Serve immediately.

Notes

Pat the salmon dry for better browning. Cut vegetables to uniform size for even cooking. Don’t skip the rice vinegar—it balances the sweetness. Let the pan rest for 2 minutes before serving. For extra caramelization, broil for 1-2 minutes at the end. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
