Easy Homemade Cranberry Sauce with Orange & Rosemary

This isn’t your average cranberry sauce. It’s the one that turns skeptics into believers, and it does it with style. The bright pop of orange and the earthy whisper of rosemary take this way beyond the ordinary.

Ingredients

Scale
  • 12 oz (340g) fresh cranberries (1 standard bag)
  • 1 cup (200g) granulated sugar
  • ½ cup (120ml) fresh orange juice (from about 1 large orange)
  • 1 tablespoon orange zest
  • 1 sprig fresh rosemary (4–5 inches long)
  • ¼ cup (60ml) water
  • Pinch of salt

Instructions

  1. Rinse the cranberries and pick out any stems or soft berries. Zest your orange before juicing it. Measure out your sugar and water.
  2. In a medium saucepan, combine the sugar, fresh orange juice, water, and a pinch of salt. Stir over medium heat until the sugar is completely dissolved.
  3. Add the fresh cranberries and the sprig of rosemary. Stir to combine.
  4. Increase heat to medium-high and bring to a boil. Let it boil for about 1 minute, until cranberries start to pop.
  5. Reduce heat to low and simmer gently for 10-12 minutes, stirring occasionally, until most berries have popped and the liquid is syrupy.
  6. Turn off the heat. Stir in the fresh orange zest. Remove and discard the rosemary sprig.
  7. Let the sauce cool in the pan for 15-20 minutes; it will thicken as it cools.
  8. Transfer to a serving bowl. Serve warm, at room temperature, or chilled.

Notes

Don’t overcook; the sauce thickens as it cools. Use a whole rosemary sprig for easy removal. Add orange zest after turning off heat to avoid bitterness. This sauce is better when made a day or two in advance. For a spiced version, add a cinnamon stick or star anise. For an adult twist, stir in 2 tablespoons of bourbon or Grand Marnier after removing from heat.
