This Easy Fall Harvest Chex Mix with Candy Corn is the perfect sweet-and-salty snack for autumn gatherings. It combines crunchy cereals, pretzels, and pumpkin seeds with a warm spiced butter coating and sweet candy corn for an irresistible treat.

Ingredients

Scale
  • 3 cups Rice Chex cereal
  • 3 cups Corn Chex cereal
  • 2 cups mini pretzel twists
  • 1 cup roasted, salted pumpkin seeds (pepitas)
  • 1 cup candy corn
  • 1 cup fall-themed candy corn mix (like Autumn Mix or Harvest Mix)
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 250°F (120°C).
  2. In your largest mixing bowl, combine the Rice Chex, Corn Chex, and mini pretzel twists. Toss gently with your hands to distribute evenly. Do not add the candy corn yet.
  3. In a small microwave-safe bowl, melt the butter in 20-second intervals until fully liquid. Whisk in the brown sugar, cinnamon, nutmeg, ginger, cloves, vanilla extract, and salt until smooth.
  4. Drizzle the butter-seasoning mixture evenly over the cereal and pretzels. Use a spatula or your hands to gently toss and coat everything thoroughly.
  5. Line a baking sheet with parchment paper and spread the coated cereal mixture in a single, even layer.
  6. Bake for 45 minutes, stirring every 15 minutes to ensure even drying and crunchiness.
  7. After 45 minutes, remove the pan from the oven. Let it cool on the pan for about 5 minutes. Then, sprinkle the candy corn and the fall mix over the top. Gently toss to combine.
  8. Let the mix cool on the baking sheet for at least 30 minutes. It will continue to crisp up as it cools.
  9. Once completely cool, break up any large clusters with your fingers. Transfer to a serving bowl or store in an airtight container.

Notes

Do not add candy corn while the mix is too hot or it will melt. Use fresh candy corn for best texture. Stir every 15 minutes during baking to prevent burning. Let cool completely before storing to maintain crunchiness.
