A quick and easy crustless quiche packed with spinach, feta, and fluffy eggs. Perfect for brunch, potlucks, or a simple weeknight dinner.

Ingredients

Scale
  • 6 large eggs (room temperature)
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 10 ounces fresh spinach
  • 1 tablespoon olive oil
  • 1 small yellow onion, diced (about 1/2 cup)
  • 2 cloves garlic, minced
  • 1 cup crumbled feta cheese
  • 1/2 cup shredded mozzarella cheese (optional)
  • 2 tablespoons fresh dill, chopped (or 1 teaspoon dried)

Instructions

  1. Preheat your oven to 375°F (190°C). Generously grease a 9-inch pie dish with butter or non-stick spray.
  2. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the diced onion and cook for 3-4 minutes until translucent. Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Add the fresh spinach to the skillet in batches. Cook for 2-3 minutes until wilted. Transfer the spinach to a clean kitchen towel or paper towels and squeeze out as much liquid as possible.
  4. Once cool enough to handle, roughly chop the spinach.
  5. In a large bowl, whisk together the eggs, milk, heavy cream, salt, pepper, and nutmeg for about 1 minute until frothy.
  6. Add the chopped spinach, crumbled feta, shredded mozzarella (if using), and fresh dill to the egg mixture. Stir gently until evenly distributed.
  7. Pour the mixture into the prepared pie dish. Spread evenly with a spatula.
  8. Bake for 25-30 minutes, until the center is just set and the edges are golden brown. The quiche should jiggle slightly in the center when shaken.
  9. Let the quiche rest for at least 10 minutes before slicing.

Notes

Don’t skip squeezing the spinach dry to avoid a watery quiche. Room temperature eggs work best for fluffiness. Let the quiche rest for 10 minutes before slicing to allow it to set properly. For a richer quiche, use half-and-half instead of milk. The nutmeg is non-negotiable for the best flavor.
