Ingredients

Scale
  • 8 oz aged cheddar
  • 8 oz brie or camembert
  • 6 oz manchego
  • 4 oz goat cheese log
  • 4 oz prosciutto
  • 4 oz salami (Genoa or soppressata)
  • 3 oz chorizo
  • ½ cup fig jam
  • ¼ cup honey
  • ½ cup dried figs, halved or quartered
  • 1 cup fresh grapes (red or green)
  • 1 small crusty baguette, sliced into ¼-inch rounds
  • 1 box neutral crackers (e.g., water crackers)
  • ½ cup toasted almonds (Marcona preferred)
  • ½ cup cornichons
  • ½ cup mixed olives (green and kalamata)
  • Fresh rosemary sprigs for garnish
  • Flaky sea salt for finishing

Instructions

  1. Set up your board: Place a large wooden board or slate platter on a flat surface. Position small bowls for fig jam, honey, and olives in different spots to anchor the layout.
  2. Place the cheeses: Arrange the cheeses around the board, spacing them out. Put brie in one corner, cheddar in another, manchego near the center, and goat cheese next to a bowl. Cut a few slices of each cheese to show what they are, leaving the rest in chunks.
  3. Add the meats: Drape prosciutto in loose, ruffled piles near the brie. Fold salami slices into quarters or leave in a small stack. Fan out chorizo slices near the cheddar.
  4. Fill in with fruits and sweets: Scatter dried figs and fresh grape clusters in gaps between cheeses and meats. Spoon fig jam into its bowl and drizzle a little honey over the brie and goat cheese. Leave remaining honey in its bowl.
  5. Add the crunchy elements: Pile baguette slices and crackers in a couple of spots on the board. Sprinkle toasted almonds in empty spaces to fill gaps.
  6. Finish with extras and garnish: Tuck cornichons and olives near the meats. Arrange rosemary sprigs artfully around the board. Sprinkle a pinch of flaky sea salt over cheeses and exposed honey.
  7. Final check: Step back and fill any obvious empty spots with extra grapes, almonds, or crackers. The board should look piled high and generous.

Notes

Bring cheeses to room temperature 30-45 minutes before serving for best flavor. The board can be assembled up to 2-3 hours ahead; cover loosely with plastic wrap and refrigerate. Add fresh herbs and final honey drizzle just before serving. For a vegetarian version, skip the meats and double up on cheeses, nuts, and roasted vegetables.
