A creamy, mild white chicken chili made in the slow cooker with cream cheese, white beans, and green chiles. Perfect for family dinners and picky eaters.

Ingredients

Scale
  • 1.5 pounds boneless, skinless chicken breasts (about 3 medium breasts)
  • 2 cans (15 oz each) white beans, drained and rinsed (Great Northern or cannellini)
  • 1 can (15 oz) corn, drained (or 1.5 cups frozen corn)
  • 2 cans (4 oz each) diced green chiles (mild)
  • 4 cups low-sodium chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces cream cheese, softened and cubed
  • 1 cup sour cream
  • 1 tablespoon lime juice
  • Shredded Monterey Jack cheese (for topping, optional)
  • Tortilla chips or strips (for topping, optional)
  • Fresh cilantro, chopped (for topping, optional)
  • Diced avocado (for topping, optional)

Instructions

  1. Prep your ingredients: Open all cans. Drain and rinse white beans. Drain corn. Open green chiles. Measure out spices.
  2. Layer everything in the crockpot: Place chicken breasts in the bottom. Add drained white beans, corn, and diced green chiles. Sprinkle garlic powder, onion powder, cumin, oregano, salt, and pepper over everything. Pour chicken broth around the sides.
  3. Cook low and slow: Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
  4. Shred the chicken: Remove lid. Use two forks to shred chicken right in the crockpot.
  5. Add the creamy finish: Add cubed cream cheese and stir until melted. Stir in sour cream and lime juice. Taste and adjust salt if needed.
  6. Let it rest: Turn crockpot to warm (or off) and let chili sit for 10 minutes to thicken.
  7. Serve and top: Ladle into bowls and add desired toppings (cheese, tortilla chips, cilantro, avocado).

Notes

Do not add dairy too early or it may curdle. Shred chicken in the pot to retain flavor. Use block cream cheese, not spreadable. Chili thickens as it sits; add broth when reheating. For a spicier version, add diced jalapeño or hot sauce. For vegetarian, omit chicken and use 3 cans white beans and vegetable broth. For thicker chili, mash half a can of beans before adding. Leftovers keep 4 days in fridge or 3 months in freezer.
