Ingredients

Scale
  • 6 cups whole milk
  • 1 cup heavy cream
  • 2 cups semi-sweet chocolate chips (e.g., Ghirardelli)
  • 1/4 cup unsweetened cocoa powder (Dutch-processed recommended)
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract (pure)
  • 1 teaspoon peppermint extract
  • 1/2 cup peppermint schnapps (or to taste)
  • Optional garnishes: whipped cream, crushed candy canes, mini marshmallows

Instructions

  1. In a small bowl, whisk together the cocoa powder and granulated sugar to prevent lumps.
  2. Pour the whole milk and heavy cream into a 4-6 quart slow cooker. Add the cocoa-sugar mixture and whisk until fully combined and smooth.
  3. Add the semi-sweet chocolate chips on top without stirring.
  4. Cover and cook on LOW for 2 hours. Do not use HIGH to avoid scorching.
  5. After 1 hour, stir the mixture well with a whisk to incorporate the melted chocolate chips and smooth out any lumps.
  6. After 2 hours, turn the slow cooker to WARM. Stir in the vanilla extract, peppermint extract, and peppermint schnapps. Taste and adjust as desired.
  7. Ladle into mugs and serve immediately with desired garnishes. If too thick, stir in a splash of warm milk.
  8. Keep warm on the WARM setting for up to 4 hours, stirring occasionally to prevent a skin from forming.

Notes

For a non-alcoholic version, double the peppermint extract and omit the schnapps. To prevent a skin from forming, stir every 30 minutes or float mini marshmallows on top. Leftovers can be stored in the fridge for up to 5 days and reheated gently.
