  • 1 1/2 cups jasmine rice (280 grams), rinsed
  • 1 3/4 cups water or low-sodium chicken broth (420 ml)

Instructions

  1. Pat the chicken thighs dry with paper towels and season lightly with salt and pepper. (10 minutes)
  2. In a medium mixing bowl, whisk together honey, soy sauce, minced garlic, ketchup, rice vinegar, grated ginger, and red pepper flakes until well combined. (5 minutes)
  3. Place the chicken thighs skin-side down into the slow cooker. Pour the honey garlic sauce evenly over the chicken, coating each piece. (5 minutes)
  4. Cover and cook on low for 4 hours or until chicken is tender and reaches an internal temperature of 165°F (74°C). (4 hours)
  5. While the chicken cooks, rinse jasmine rice under cold water until clear. In a medium saucepan, combine rice, water or broth, and a pinch of salt. Bring to a boil over medium-high heat, then reduce to a simmer, cover tightly, and cook for 15 minutes. Remove from heat and let sit covered for 10 minutes before fluffing. (25 minutes)
  6. About 15 minutes before serving, remove chicken thighs and set aside. Stir cornstarch slurry into crockpot sauce and cook on high for 10-15 minutes until sauce thickens to a glossy glaze. (15 minutes)
