Instructions

  1. In a small mixing bowl, whisk together honey, soy sauce, minced garlic, ketchup, rice vinegar, sesame oil, and red pepper flakes. Taste and adjust honey or soy sauce if needed.
  2. Pat chicken thighs dry with paper towels and trim excess fat if desired.
  3. Place chicken thighs in the bottom of a 5-6 quart slow cooker in a single layer. Pour sauce over the top, using tongs to coat each piece.
  4. Cover and cook on LOW for 4-5 hours or on HIGH for 2.5-3 hours, until chicken is fork-tender and reaches an internal temperature of 165°F.
  5. Carefully transfer cooked chicken to a plate and tent loosely with foil to keep warm.
  6. Turn slow cooker to HIGH. In a small bowl, whisk cornstarch and cold water until smooth. Pour slurry into the sauce in the crockpot and stir well. Cook uncovered for 10-15 minutes, stirring occasionally, until sauce thickens to a glossy, syrupy consistency.
  7. Return chicken to the crockpot and spoon thickened sauce over each piece. Let sit for 5 minutes. Garnish with sliced green onions and sesame seeds before serving.
