These Easy Crockpot Buffalo Chicken Sliders are the ultimate party appetizer—set-it-and-forget-it slow cooker magic with tender, spicy chicken piled onto soft buns with blue cheese crumbles. Perfect for game day, potlucks, or any gathering, they’re always the first thing to disappear.

  • 2 pounds boneless, skinless chicken breasts (about 45 medium breasts)
  • 1 cup Frank’s RedHot Original Cayenne Pepper Sauce
  • 1/2 cup unsalted butter (1 stick)
  • 1 packet ranch dressing mix (about 1 ounce)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tablespoon Worcestershire sauce
  • Salt and black pepper to taste
  • 1216 slider buns (brioche, Hawaiian rolls, or potato rolls)
  • 1 cup blue cheese crumbles
  • Celery sticks for serving
  • Carrot sticks (optional) for serving
  • Ranch or blue cheese dressing for drizzling or dipping
  • Shredded lettuce (optional)
  • Sliced pickled jalapeños (optional)
  • Thinly sliced red onion (optional)
  • Fresh chives or green onions (optional)

Instructions

  1. Place the chicken breasts in the bottom of your slow cooker in a single layer. Season lightly with salt and pepper.
  2. In a small bowl or measuring cup, whisk together the Frank’s RedHot, melted butter, ranch dressing mix, garlic powder, onion powder, and Worcestershire sauce. Pour over the chicken, coating each piece.
  3. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is tender and easily shreds with a fork.
  4. Carefully remove the chicken from the slow cooker and shred with two forks (or use a hand mixer on low speed). Return shredded chicken to the slow cooker and stir to coat with sauce.
  5. Let the chicken cook on low for another 30 minutes, uncovered, to allow the sauce to thicken and soak into the chicken.
  6. While the chicken finishes, split the slider buns and toast them lightly under the broiler, on a griddle, or in a toaster until golden brown.
  7. Place the bottom half of each bun on a serving platter. Spoon a generous amount of Buffalo chicken onto each bun. Top with blue cheese crumbles and any other desired toppings. Place the top bun on and press down gently.
  8. Serve immediately with celery and carrot sticks, and extra ranch or blue cheese dressing for dipping.

Notes

For a milder version, use 1/2 cup hot sauce and 1/2 cup chicken broth. To make it dairy-free, use vegan butter and skip the blue cheese. The chicken can be cooked and shredded up to 3 days in advance; store in the sauce in the fridge. Reheat before serving. To keep warm for a party, keep the shredded chicken in the slow cooker on the ‘warm’ setting and let guests assemble their own sliders.
