  • 8 oz cream cheese, softened to room temperature
  • 1/2 cup buffalo hot sauce (Frank’s RedHot preferred)
  • 1/2 cup shredded cheddar cheese (sharp cheddar recommended)
  • 1/4 cup crumbled blue cheese (optional)
  • 1/4 cup ranch dressing (or blue cheese dressing)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and black pepper to taste
  • 1 can (16.3 oz) refrigerated buttermilk biscuits (8 count, flaky layers kind)
  • 2 tablespoons melted butter
  • 1 tablespoon buffalo hot sauce (for brushing tops)
  • Optional garnish: chopped green onions, extra blue cheese crumbles, fresh parsley

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Make the buffalo chicken filling: In a large bowl, combine the softened cream cheese, shredded chicken, buffalo hot sauce, shredded cheddar, crumbled blue cheese (if using), ranch dressing, garlic powder, and onion powder. Mix until well combined and creamy. Season with salt and pepper to taste.
  3. Prepare the biscuits: Open the can of refrigerated biscuits and separate them. Place each biscuit on a lightly floured surface or between two pieces of parchment paper. Flatten each biscuit into a 4-inch round using your hands or a rolling pin.
  4. Fill and seal the bites: Spoon about 1 to 1.5 tablespoons of the buffalo chicken filling into the center of each flattened biscuit. Fold the dough over the filling to create a half-moon shape or bring the edges together to form a ball. Pinch the seams firmly to seal. Place each bite seam-side down on the prepared baking sheet, leaving about 2 inches of space between each one.
  5. Brush the tops: In a small bowl, mix the melted butter with 1 tablespoon of buffalo hot sauce. Brush this mixture generously over the tops of each bite. Optionally, cut a small slit on top of each bite to let steam escape.
  6. Bake: Place the baking sheet in the preheated oven and bake for 14-18 minutes, or until the biscuits are golden brown and crispy on the outside and the filling is hot and bubbly.
  7. Cool and serve: Let the bites cool on the baking sheet for 5 minutes before transferring to a serving platter. Garnish with chopped green onions, extra blue cheese crumbles, or a drizzle of ranch dressing if desired. Serve warm.

Notes

Don’t overfill the biscuits—1 to 1.5 tablespoons is the sweet spot. Seal edges well to prevent bursting. Use room temperature cream cheese for smooth mixing. For extra crispy exterior, brush with butter and hot sauce twice (once before baking and once halfway through). Serve immediately for best texture. To reheat, use a 350°F oven or air fryer for 5-7 minutes.
