These Cranberry Orange Bliss Bars with White Chocolate Drizzle are a happy accident turned holiday favorite—soft, buttery bars with tart cranberries, bright orange zest, and a creamy white chocolate drizzle. Perfect for Thanksgiving, Christmas brunch, or any cozy gathering.

Ingredients

Scale
  • 1 cup (226g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) packed light brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • Zest of 2 large oranges (about 2 tablespoons)
  • 2 cups (250g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups (200g) fresh or frozen cranberries (if frozen, do not thaw)
  • 1/2 cup (85g) white chocolate chips or chopped white chocolate
  • 1 tablespoon coconut oil or vegetable shortening

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving overhang on two sides. Lightly grease the parchment with butter or non-stick spray.
  2. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together on medium speed until light and fluffy, about 3-4 minutes. Scrape down the sides once or twice.
  3. Beat in the eggs one at a time, mixing well after each addition. Add the vanilla extract and orange zest, and mix until combined.
  4. In a separate medium bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the flour mixture to the butter mixture, mixing on low speed until just combined. Do not overmix.
  6. Using a rubber spatula, gently fold the cranberries into the batter. The batter will be thick, like cookie dough.
  7. Transfer the batter to the prepared pan and spread it evenly, pressing into the corners.
  8. Bake for 25-30 minutes, until the edges are golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs.
  9. Cool completely in the pan on a cooling rack before adding the drizzle.
  10. Once cool, place the white chocolate chips and coconut oil in a small microwave-safe bowl. Microwave in 20-second intervals, stirring after each, until smooth and fully melted.
  11. Using a fork or small piping bag, drizzle the melted white chocolate over the cooled bars in a zigzag pattern.
  12. Let the drizzle set at room temperature for about 30 minutes, or refrigerate for 15 minutes. Lift the bars out using the parchment overhang, slice into squares, and serve.

Notes

Don’t overmix the batter to keep bars tender. Use room temperature eggs. If using frozen cranberries, do not thaw. White chocolate can seize if overheated; add a little coconut oil to keep it smooth. Bars taste even better the next day. For make-ahead, bake bars a day ahead, cool, and add drizzle just before serving.
