Easy Cranberry Brie Bites: Best Party Appetizer

These cranberry brie bites are the ultimate party appetizer, featuring flaky puff pastry, warm melted brie, sweet-tart cranberry sauce, and crunchy pecans. Ready in just 25 minutes, they’re a crowd-pleaser that will convert even the pickiest eaters.

  • 1 package (17.3 ounces) frozen puff pastry sheets, thawed
  • 1 wheel (8 ounces) brie cheese
  • 1/2 cup cranberry sauce
  • 1/4 cup chopped pecans
  • 1 large egg, beaten with 1 tablespoon water
  • Fresh rosemary or thyme for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Lightly flour your work surface and unfold one sheet of the thawed puff pastry. Using a rolling pin, gently roll it out to about 1/8-inch thickness. Cut out circles using a 2-inch round cookie cutter. You should get about 12 circles per sheet. Gather the scraps, press them together gently, and re-roll to cut out more.
  3. Press the circles onto the prepared baking sheet, spacing them about an inch apart. Using your fingertips, gently press down the center of each circle to create a slight indentation.
  4. Slice the brie wheel in half horizontally, then cut each half into small cubes, about 1/2-inch each. Leave the rind on.
  5. Place one cube of brie in the center of each pastry circle. Top with about 1/2 teaspoon of cranberry sauce. Sprinkle a few chopped pecans on top.
  6. In a small bowl, whisk together the beaten egg and water. Using a pastry brush, lightly brush the edges of each pastry circle with the egg wash.
  7. Bake for 12-15 minutes, until the pastry is puffed up and deeply golden brown, and the brie is melted and bubbly.
  8. Let the bites rest on the baking sheet for about 5 minutes before serving.
  9. If using fresh herbs, place a tiny sprig of rosemary or a few thyme leaves on top of each bite right before serving.

Notes

For best results, keep the puff pastry cold. If your kitchen is warm, pop the assembled bites in the fridge for 10 minutes before baking. Use jellied cranberry sauce to prevent soggy bottoms. Bites can be assembled up to 4 hours ahead and refrigerated before baking. To freeze, assemble on a baking sheet, freeze solid, then transfer to a freezer bag; bake directly from frozen, adding about 5 minutes to the baking time.
