  • 1 can (12 oz or 354ml) evaporated milk
  • 3 large eggs, room temperature
  • 3/4 cup (150g) granulated sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 box (15.25 oz or 432g) yellow cake mix
  • 1 cup (120g) chopped pecans, toasted
  • 1/2 cup (100g) packed light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup (113g or 1 stick) unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Toast the pecans (optional but highly recommended): Spread the chopped pecans on a baking sheet and toast for 5-7 minutes until fragrant. Set aside to cool.
  3. Make the pumpkin filling: In a large bowl, whisk together the pumpkin puree, evaporated milk, eggs, granulated sugar, vanilla extract, pumpkin pie spice, cinnamon, and salt until smooth and well combined.
  4. Pour the filling into the prepared baking dish and spread evenly with a rubber spatula.
  5. Prepare the streusel topping: In a separate small bowl, combine the yellow cake mix, toasted pecans, brown sugar, and cinnamon. Mix with a fork until evenly distributed. Pour the melted butter over the dry mixture and stir until it forms a crumbly, streusel-like texture.
  6. Sprinkle the streusel mixture evenly over the pumpkin filling. Do not stir.
  7. Bake for 45-50 minutes, until the top is golden brown and the filling is set around the edges but still slightly jiggly in the center.
  8. Let the dump cake cool on a wire rack for at least 20-30 minutes before serving.

Notes

Toast the pecans for best flavor. Let the cake cool completely before cutting to allow it to set. For a gluten-free version, use a gluten-free yellow cake mix. For dairy-free, use coconut oil or plant-based butter and full-fat coconut milk instead of evaporated milk.
