Crunchy, sweet, and perfectly caramelized, these cinnamon sugar pumpkin seeds are the easiest fall snack you’ll ever make. No boiling, no soaking, just rinse, toss, and bake for a treat that tastes like cinnamon toast.

Ingredients

Scale
  • 1 cup fresh pumpkin seeds (about 4 ounces)
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon salt (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper if desired.
  2. Scoop the seeds out of your pumpkin and place them in a colander. Rinse with cool water while using your fingers to separate the seeds from the stringy pulp. Shake well to remove excess water.
  3. Transfer the rinsed seeds to a clean kitchen towel or paper towels. Pat them dry, pressing gently to absorb moisture. Let them sit for 5 minutes.
  4. In a mixing bowl, combine the melted butter, granulated sugar, ground cinnamon, and optional salt. Stir until the sugar starts to dissolve into the butter, forming a thick, grainy paste.
  5. Add the dried pumpkin seeds to the bowl and toss with a spatula or spoon until every seed is coated, about 30 seconds.
  6. Pour the coated seeds onto the prepared baking sheet and spread them into a single, even layer.
  7. Bake for 10 minutes. Do not open the oven door during this time.
  8. After 10 minutes, remove the baking sheet from the oven and stir the seeds. Rotate the pan front to back. Spread them back into a single layer.
  9. Return to the oven and bake for another 5-8 minutes, checking at the 5-minute mark. The seeds are done when they are golden brown and smell deeply toasted.
  10. Remove from the oven and let the seeds cool on the pan for at least 10 minutes. They will continue to crisp as they cool.
  11. Once cooled, gently break apart any clumps and serve.

Notes

For best results, dry the seeds thoroughly before baking to ensure crispiness. Watch the last few minutes of baking closely to prevent burning. The seeds will continue to crisp as they cool. Store in an airtight container at room temperature for up to 5 days.
