Quick and easy chocolate cookies with a surprise Andes mint center. Perfect for holiday cookie exchanges, these fudgy cookies come together in under 30 minutes with simple pantry ingredients.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 24–30 Andes Creme de Menthe Thins, unwrapped

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes. Scrape down the sides of the bowl halfway through.
  3. Beat in the egg and vanilla extract until fully combined, about 30 seconds.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the butter mixture, mixing on low speed until just combined. Do not overmix.
  6. Using a cookie scoop or heaping tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 8-10 minutes. The cookies are done when the edges look set and the tops are slightly crackled; centers will still look soft.
  8. As soon as the cookies come out of the oven, let them rest on the baking sheet for exactly 1 minute.
  9. Gently press one Andes mint into the center of each warm cookie until almost flush with the surface.
  10. Allow the cookies to cool on the baking sheet for another 2-3 minutes, then transfer to a wire rack to cool completely.
  11. Repeat with remaining dough, letting the baking sheet cool completely between batches.

Notes

Don’t overbake! Cookies should look slightly underdone when removed from oven. The one-minute rest before adding mints is crucial for proper melting. For best results, use fresh Andes mints and room temperature ingredients. Cookies can be stored in an airtight container for up to 5 days or frozen for up to 3 months.
