This Easy Candy Corn White Chocolate Cookie Bark is the perfect party treat that comes together in just 15 minutes. Creamy white chocolate, crunchy shortbread cookies, and chewy candy corn create an irresistible sweet and salty combination that looks stunning with minimal effort.

Ingredients

Scale
  • 16 oz (450g) white chocolate chips or melting wafers
  • 1 ½ cups (225g) candy corn
  • 1 ½ cups (about 150g) crushed shortbread or butter cookies
  • 1 teaspoon vegetable oil or coconut oil (optional)
  • Flaky sea salt for garnish (optional)

Instructions

  1. Line a 9×13-inch baking pan or sheet pan with parchment paper, ensuring the paper comes up the sides for easy removal.
  2. Place shortbread cookies in a Ziploc bag and crush with a rolling pin or heavy measuring cup to a mix of fine crumbs and small chunks.
  3. Melt white chocolate chips in a microwave-safe bowl in 30-second intervals at 50% power, stirring well after each interval, until smooth. Stir in vegetable oil if using.
  4. Pour crushed cookies into melted white chocolate and fold with a rubber spatula until evenly coated.
  5. Scrape the mixture into the prepared pan and spread into an even layer about ¼ inch thick.
  6. Gently press candy corn into the top of the warm chocolate mixture in a single layer, evenly spaced.
  7. Sprinkle with flaky sea salt if desired.
  8. Refrigerate for at least 1 hour until completely firm and solid.
  9. Lift the bark out of the pan using the parchment paper and break into rustic pieces or cut into squares with a sharp knife.

Notes

Use fresh, soft candy corn for best results. Avoid overheating white chocolate to prevent seizing. For a saltier version, replace half the cookies with crushed pretzels. Store in an airtight container in the refrigerator for up to 2 weeks or freeze for up to 3 months.
