This creamy, spicy buffalo chicken dip is made effortlessly in a slow cooker, perfect for Friendsgiving, game day, or any gathering. It’s the ultimate crowd-pleaser that lets you enjoy your own party without any stress.

Ingredients

Scale
  • 1.5 pounds boneless, skinless chicken breasts (about 3 large breasts) or 3 cups shredded rotisserie chicken
  • 16 ounces (two 8-ounce blocks) full-fat cream cheese, softened to room temperature
  • 1 cup (240 ml) buffalo wing sauce (recommended: Frank’s RedHot Original)
  • 1 packet (1 ounce) dry ranch seasoning mix
  • 2 cups (8 ounces) shredded sharp cheddar cheese, plus 1/2 cup for topping
  • 1/2 cup blue cheese crumbles (optional)
  • 2 tablespoons unsalted butter, cut into small cubes
  • 2 cloves garlic, minced
  • 3–4 green onions, sliced, for garnish

Instructions

  1. Place the 1.5 pounds of boneless, skinless chicken breasts in the bottom of your slow cooker. If using rotisserie chicken, skip to step 4.
  2. In a small bowl, whisk together the 1 cup of buffalo sauce, the 2 tablespoons of minced garlic, and the 2 tablespoons of butter (cut into small cubes). Pour this mixture over the chicken.
  3. Cover the slow cooker and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until the chicken is fork-tender and shreds easily.
  4. Carefully remove the cooked chicken breasts to a large mixing bowl. Use two forks to shred the meat. Pour any remaining liquid from the slow cooker back over the shredded chicken.
  5. While the chicken is still warm, add the two 8-ounce blocks of softened cream cheese to a separate mixing bowl. Beat with a hand mixer on medium speed until smooth and fluffy, about 2 minutes.
  6. Return the shredded chicken to the slow cooker. Add the beaten cream cheese, the packet of ranch seasoning, and 1.5 cups of the shredded cheddar cheese (reserve the remaining 1/2 cup for topping). Stir everything together until well combined.
  7. Cover the slow cooker again and cook on LOW for another 30-45 minutes, or until the dip is hot and bubbly. Stir once halfway through.
  8. Sprinkle the remaining 1/2 cup of shredded cheddar cheese and the 1/2 cup of blue cheese crumbles (if using) over the top. Cover and cook for another 5-10 minutes, just until the cheese melts. Garnish with sliced green onions and serve warm.

Notes

For best texture, use full-fat cream cheese and shred your own cheddar cheese from a block. If using frozen chicken breasts, add an extra hour to the cooking time on LOW. To make ahead, prepare the dip completely, cool, and refrigerate for up to 4 days; reheat in the slow cooker on LOW for 1-2 hours.
