Ingredients

Scale
  • 1 ½ cups all-purpose flour (spooned and leveled)
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder (preferably Ghirardelli)
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup buttermilk, room temperature (or 1 cup milk mixed with 1 tablespoon lemon juice, let sit 5 minutes)
  • ½ cup vegetable oil
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ½ cup hot coffee
  • 1 cup unsalted butter, softened (preferably Kerrygold)
  • 3 ½ cups powdered sugar, sifted
  • ½ cup unsweetened cocoa powder, sifted
  • ¼ cup heavy cream (or whole milk)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Black licorice strings, cut into 3-inch pieces (8 per cupcake)
  • Candy eyes
  • Optional: black sanding sugar

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. In a separate bowl, whisk together buttermilk, vegetable oil, eggs, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients and stir gently with a rubber spatula until just combined.
  5. Pour in hot coffee and stir until batter is smooth and thin.
  6. Divide batter evenly among the 12 liners, filling each about ⅔ full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  8. Let cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  9. While cupcakes cool, make frosting: Beat softened butter with an electric mixer on medium speed until creamy, about 2 minutes.
  10. Gradually add sifted powdered sugar and cocoa powder, alternating with heavy cream. Beat on low until combined, then increase to medium-high and beat for 3 minutes until light and fluffy.
  11. Add vanilla and salt, then beat one more minute.
  12. Fit a piping bag with a large round tip and fill with frosting. Pipe a generous mound onto each cooled cupcake to form a rounded spider body.
  13. Gently press 8 pieces of black licorice string into the frosting on each side of the spider body—4 on the left, 4 on the right—angled slightly downward.
  14. Press two candy eyes onto the front of each spider body. If needed, dab a tiny bit of frosting on the back of the eyes to help them stick.
  15. Optional: Sprinkle black sanding sugar over the wet frosting for a shimmering effect. Let frosting set for about 15 minutes before serving.

Notes

Room temperature ingredients matter for proper emulsification. Don’t skip the hot coffee—it deepens the chocolate flavor without making the cupcakes taste like coffee. For frosting consistency, aim for soft peaks; if too soft, add more powdered sugar; if too stiff, add a teaspoon of cream. Insert licorice legs at a downward angle for a crawling look. Store cupcakes in an airtight container at room temperature for up to 2 days; do not refrigerate. Unfrosted cupcakes can be frozen for up to 3 months.
