  • ¼ cup (50g) light brown sugar, packed
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda

  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ¾ cup (170g) pumpkin puree (100% pure pumpkin)
  • ½ cup (120ml) buttermilk, room temperature
  • 1 large egg, room temperature
  • 4 tablespoons (57g) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • 1 cup (120g) powdered sugar, sifted
  • 3 tablespoons pure maple syrup
  • 12 tablespoons milk (whole milk preferred)
  • ½ teaspoon vanilla extract (optional, for glaze)
  • Pinch of salt (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Generously grease a 6-cavity donut pan with butter or non-stick spray.
  2. In a medium bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt.
  3. In a large bowl, whisk together pumpkin puree, buttermilk, egg, melted butter, and vanilla extract until smooth.
  4. Pour dry ingredients into wet ingredients. Fold gently with a rubber spatula until just combined (a few lumps are fine).
  5. Transfer batter to a piping bag or zip-top bag. Snip off about ½ inch from the corner. Pipe batter into each donut cavity, filling about ¾ full.
  6. Bake for 10-12 minutes, until donuts spring back when touched and a toothpick inserted comes out clean.
  7. Let donuts cool in the pan for 5 minutes, then turn out onto a cooling rack.
  8. While donuts cool, make the glaze: In a small bowl, whisk together sifted powdered sugar, maple syrup, 1 tablespoon milk, vanilla extract (if using), and a pinch of salt. Add more milk if needed to reach desired consistency.
  9. Let donuts cool for 5-10 more minutes (warm but not hot). Dip the top of each donut into the glaze, letting excess drip off. Place glazed donuts back on the rack.
  10. Let glaze set for 10-15 minutes, or serve immediately for a runny glaze. Enjoy warm or at room temperature.
