This Easy Apple Cider Mimosa with Cinnamon Rim is a quick, two-minute cocktail that combines tart apple cider with dry sparkling wine and a spiced cinnamon-sugar rim. Perfect for fall gatherings, it’s a crowd-pleasing drink that looks impressive but requires minimal effort.

Ingredients

Scale
  • 2 tablespoons granulated sugar
  • 1 tablespoon ground cinnamon
  • 1 lemon wedge
  • 1 bottle (750 ml) chilled Prosecco or other dry sparkling wine
  • 2 cups chilled, high-quality apple cider
  • Ice cubes (optional)
  • Thin apple slices and whole cinnamon sticks for garnish (optional)

Instructions

  1. In a small, shallow dish, whisk together 2 tablespoons granulated sugar and 1 tablespoon ground cinnamon until evenly combined.
  2. Run a lemon wedge around the rim of each champagne flute or wine glass. Immediately dip the moistened rim into the cinnamon-sugar mixture, twisting gently to coat evenly. Tap off any excess. Let rims dry for a minute or two.
  3. Ensure apple cider and sparkling wine are thoroughly chilled (at least 2 hours in the fridge).
  4. For each glass, pour about 1/3 cup (80 ml) of chilled apple cider.
  5. Slowly pour chilled sparkling wine into the glass, tilting the glass at a 45-degree angle to preserve carbonation. Fill to about 1 inch from the rim.
  6. Gently stir once with a long spoon to combine. Garnish with a thin apple slice and a whole cinnamon stick, if desired. Serve immediately.

Notes

For a crowd, mix chilled apple cider and sparkling wine in a large pitcher in a 1:2 ratio. Rimmed glasses can be prepped up to 2 hours ahead. Serve immediately to keep bubbles fresh and rim intact.
