These Easy 5-Ingredient Crockpot Meatball Subs for Tailgating are the ultimate game-day comfort food. With just frozen meatballs, marinara, provolone, hoagie rolls, and butter, you can set it and forget it in the slow cooker for a crowd-pleasing meal that tastes like you spent hours in the kitchen.

Ingredients

Scale
  • 2430 ounces frozen meatballs (fully cooked, homestyle or Italian-style)
  • 24 ounces marinara sauce (one standard jar)
  • 810 slices provolone cheese (deli-sliced)
  • 6 hoagie rolls (sturdy Italian or French bread-style)
  • 23 tablespoons unsalted butter (softened)

Instructions

  1. Add frozen meatballs and marinara sauce to the crockpot. Stir gently to coat the meatballs.
  2. Cook on low for 4–5 hours or on high for 2–3 hours. Stir about 30 minutes before serving.
  3. About 10 minutes before serving, preheat oven to 375°F. Split hoagie rolls lengthwise (leave one side attached like a hinge). Spread softened butter on the inside of each roll.
  4. Place rolls on a baking sheet, cut side up, and toast for 5–7 minutes until golden and slightly crispy.
  5. Using tongs, place 4–5 meatballs on the bottom half of each toasted roll. Scoop extra sauce over the meatballs.
  6. Lay 1–2 slices of provolone cheese on top of the meatballs.
  7. Return assembled subs to the oven for 2–3 minutes until cheese is melted and bubbly.
  8. Serve immediately. Close the roll gently and let cool for a minute before eating.

Notes

Toast the rolls right before serving to prevent sogginess. Keep the crockpot on warm during the party. For extra heat, add red pepper flakes. Leftover meatballs and sauce can be stored separately from bread for up to 4 days.
