These chewy, protein-packed cookies use ground turkey and peanut butter for a unique, kid-approved treat that’s budget-friendly and gluten-free.

Ingredients

Scale
  • 1 pound lean ground turkey (93/7)
  • 1 cup creamy peanut butter
  • 1/2 cup granulated sugar (or 1/3 cup honey/maple syrup)
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips (optional)
  • 1/4 cup finely chopped nuts (optional)
  • A pinch of cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking sheet with parchment paper or a silicone mat.
  2. In a large mixing bowl, combine the ground turkey, peanut butter, sugar, and vanilla extract. Use your hands or a sturdy spatula to mix until just combined. Do not overmix.
  3. Shape the dough into 1.5-tablespoon-sized balls. A cookie scoop makes this step easy. If using a tablespoon, scoop rounded spoonfuls and roll into balls between your palms.
  4. Place the balls on the prepared baking sheet, spacing them about 2 inches apart.
  5. Flatten each ball slightly with the back of a fork to create a crisscross pattern. Dip the fork in water or sugar between pressing to prevent sticking.
  6. Bake for 10-12 minutes, or until the edges are golden brown and the centers look set. The cookies will still be soft when you take them out.
  7. Let the cookies cool on the baking sheet for 5 minutes. Then transfer them to a cooling rack to cool completely.
  8. Repeat with the remaining dough. If using the same baking sheet, let it cool down between batches.

Notes

For extra chewiness, underbake by a minute. Use room-temperature ingredients for easier mixing. If cookies spread too much, chill dough for 15 minutes before shaping. These cookies taste even better the next day.
