  • ½ cup (115g) unsalted butter, melted and slightly cooled
  • 1 tsp vanilla extract
  • 1 ½ cups (about 2 medium) zucchini, finely grated and excess liquid squeezed out
  • 6 oz (170g) dark chocolate (70% cacao recommended), chopped
  • ½ cup (120ml) heavy cream
  • 1 tsp flaky sea salt (like Maldon)

Instructions

  1. Wash and finely grate the zucchini. Place it in a clean kitchen towel and squeeze out as much moisture as possible. Set aside.
  2. Preheat oven to 350°F (175°C). Grease a 9×9 inch baking pan or line it with parchment paper.
  3. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, and salt until well combined.
  4. In a separate bowl, beat the eggs lightly, then stir in melted butter and vanilla extract.
  5. Pour wet ingredients into dry ingredients and stir gently until just combined. Fold in grated zucchini evenly.
  6. Pour batter into prepared pan and smooth the top. Bake for 25-30 minutes or until a toothpick inserted near the center comes out with a few moist crumbs.
  7. Let brownies cool in the pan on a wire rack for at least 20 minutes.
  8. Heat heavy cream in a small saucepan over medium heat until just simmering. Pour over chopped dark chocolate in a heatproof bowl. Let sit for 2 minutes, then whisk until smooth and glossy.
  9. Pour ganache evenly over cooled brownies and spread with an offset spatula. Sprinkle flaky sea salt on top. Refrigerate for 15-20 minutes to set ganache.
  10. Slice into squares and serve.
