Ingredients

Scale
  • 1/2 cup (1 stick / 113g) unsalted butter, melted
  • 1 cup (200g) packed light brown sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (125g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup (about 150g) candy corn
  • 1/2 cup (90g) white chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line your 8×8-inch baking pan with parchment paper, leaving an overhang on two opposite sides.
  2. In a medium microwave-safe bowl, melt the butter in 20-second increments until fully liquid. Let it cool for 2 minutes.
  3. Add the brown sugar to the melted butter and whisk until combined and smooth. Then whisk in the egg and vanilla extract until the mixture is glossy and well incorporated.
  4. In a separate small bowl, whisk together the flour, baking powder, and salt.
  5. Pour the dry ingredients into the wet mixture and fold gently with a rubber spatula until just combined. Do not overmix.
  6. Reserve about 1/4 cup of the candy corn and 2 tablespoons of the white chocolate chips for the top. Gently fold the remaining candy corn and white chocolate chips into the batter.
  7. Scrape the batter into the prepared pan and spread it evenly. Sprinkle the reserved candy corn and white chocolate chips on top, pressing them in slightly.
  8. Bake on the middle rack for 20-22 minutes. The edges should be golden brown and set, but the center will still look slightly soft and puffy.
  9. Transfer the pan to a cooling rack and let the blondies cool for at least 30 minutes before lifting them out using the parchment overhang.
  10. Use a sharp knife to cut into 16 squares. For cleaner slices, wipe the knife between cuts.

Notes

Don’t overmix the batter. Watch the bake time closely—start checking at 18 minutes. Let blondies cool completely before cutting to prevent crumbling. For cleaner slices, chill in the refrigerator for 15 minutes before cutting. These blondies taste even better the next day.
